Entente joins the list of 2018 Michelin Star Recipients


Perhaps the food gods, pleased by such demonstrations of respect, brought Fisher to the attention of Arami owner Ty Fujimura, who was planning a new project in Lakeview. Thus was born Entente, which Fisher calls a restaurant “rooted in what we both believe in.”

“We wanted an evolving restaurant that feeds off the sum of its own parts by banding together a collection of experienced talent in one room and pushing for a true collaborative effort in the kitchen,” Fujimura says. The team shook up the traditional role of the executive chef by sharing the duties. Each person contributes to the menu, which is driven by seasonality and cross-cultural interpretations of global dishes. “We’ll start with very traditional techniques but use ingredients from outside of those techniques’ region (of origin),” Fujimura says.

Chicago is awash in restaurants one visits strictly for sushi, and then those that handle noodle dishes and other hot items well but where sushi and sashimi are afterthoughts, if they’re available at all.

Arami, however, is one of the best-balanced Japanese restaurants in Chicago, a multi-tooled player (...) where the sushi bar and hot kitchen both operate at high levels, helped along by a surprisingly thorough beverage program. The West Town Japanese restaurant impresses with food from chefs Ajay Popli and Nelson Vinansaca. The pair and their team turn out pristine sushi and sashimi, along with noodle bowls like the accomplished, pork belly-laden Arami ramen and other well-composed dishes.
